Fried Calamari

Ingredients:

6oz. sliced calamari rings
3 cups flour
3oz. Old Bay seasoning
1 large flour tortilla ( optional for presentation )
1 lemon ( cut in half to sprinkle on fried calamari )
1oz. baby mixed greens
3qt. cooking oil ( olive oil preferred)

Remoulade sauce:
2 cups mayonnaise
2 teaspoons Old Bay seasoning
1oz. chopped anchovies
1oz. chopped capers
½oz. lemon juice
½oz. chopped parsley

Preparation:

  1. Place oil in a deep pan. Heat to 375 degrees
  2. Place flour in bowl, add seasoning and mix well
  3. Dredge calamari in seasoned flour, shake off extra flour
  4. Deep fry calamari until golden brown and done
  5. Place tortilla on the center of the plate
  6. Place baby greens inside of tortilla
  7. Place calamari on top of baby greens
  8. Place remoulade sauce in a ramekin
  9. Garnish with half of lemon

Remoulade Sauce:

  1. Place mayonnaise in a large bowl
  2. Finely chop anchovies ( optional ), capers and parsley
  3. Add to mayonnaise and lemon juice
  4. Mix well
